EASTER...CARROT CAKE...KIDS AND CONFERENCE~


~ BEST CARROT CAKE EVER ~

Cream together ;

1 1/2 Cups Wesson Oil
2 Cups Sugar
3 Eggs


Add:

2 Cups grated carrots ( 3 lg. carrots)
1 Cup crushed pineapple..drained

2 1/2 Cups of flour
1 tsp. Baking Soda
1/2 tsp. Salt
2 tsp. Cinnamon

Mix together.. then add;

2 tsp. Vanilla
1 Cup nuts/ and optional..1Cup Raisins.

Beat all together well..
pour into greased & floured 9x13 pan
Bake at 325* for 55 minutes. Cool.


"FROSTING"

1 Box Powdered Sugar (or 3-4 Cups)
1 Stick Soft Butter
3 oz. Phili Cream Cheese
1 tsp. Vanilla
A little milk if needed..

Mix, and frost & decorate cake.

Hope you will love this cake as much as I do, it's a good family tradition
and the best carrot cake recipe I have ever found!

Natalie & Brody, with Tiffany's poodles, Ollie&Tucker.
Natalie has a special touch with animals,
no one can catch a chicken SO gently,
the chicken doesn't even realize he's caught!


These little cousins sure do like each other..Caleb & Brody


Caleb sat on my lap such a long time,
watching video's of Uncle Michael riding his trials bike,
saying; " Varoom... Varoom!"


He'd climb up on top of the little dog, onto the lamp table and over the back of the couch!



Caleb was up, over and into everything in such a cute way!
Hiding in the Barbie house...
standing at the window with "Cougar"...woofing at each other.



I love this weekend..it is our church's General Conference,
two days of wonderful talks by church leaders and beautiful music
by The Tabernacle Choir,
family visits..most especially the grand kids, and good food.

Conference is always so uplifting, helping me to keep my focus on the solid,
trust-able things of life. I'm so grateful for the Savior's gospel and that He is in charge of this world and leading us everyday with his great love and tender mercies.

I'm looking forward to Easter this weekend... to get you in the mood;

"Where do Easter Bunnies go for new tails?"... (To the Retail store)

"What happened to the egg when he was tickled too much? "... (He cracked up!)

"What kind of jokes do eggs tell?"... (Egg Yolks!)

This too, is one of my favorite weekends. I'm excited to watch and listen to conference, Saturday is always my favorite session.

Good Morning!
We are back from our little trip, and while driving by the Manti temple, we just had to stop and take a few pictures. There were two brides getting their pictures taken also. Gorgeous day. Can't wait to watch conference. Isn't it the best!! Your grandkids are adorable, and how lucky you that they get to spend so much time with you :)

The carrot cake looks devine! I think I will make it for our Easter dessert. The Hubby can't have nuts in anything but if I grind them up it's okay and you still get the taste. :o)

Love the jokes and now you can think of all of us eating your carrot cake, must try.

Wanted to tell you this as I know you love the choir also:
during intermission of the conference the MORMON TABERNACLE CHOIR TOUR from last June that we were so blessed to have gone on with them will broadcast on the BYU STATION.
Everyone is so excited to finally see it. Touring the Midwest with this group was a turning point in my life.
Hope you can have a chance to watch some of it. I will just sit there and boo hoo through it all.
Hope your feeling somewhat better, just stay slow.

I read your previous post and enjoyed it so much. Brody is adorable, what is it about babies feet that we just swoon over, I love to kiss their little footsies.


I too love animals and agree that God expects us to care for them as they bring so much joy to our lives. Cougar adds so much to your family, your grandchildren will have many wonderful memories to carry them through life.

Yes conference is wonderful...always love to watch/listen...I always have a big lump in my throat by the end of each session. Makes one very grateful and wanting to do better!

In Arizona a local tv station carried it for a few years but stopped this year...so we usually watch or listen through the internet. Tomorrow we will hook up the projector to the computer and watch it on the big screen like a movie...my husband does this...don't ask me how it is done!

So glad that you had a great Easter! Conference was the best! I am so grateful that we have a living prophet!!
I certainly feel that we were spiritually fed. Now, I need to work at the things that we were taught and become a better servant to our Heavenly Father :)
We are getting storm clouds here...yucky. I'm fixin to pack my bags and move to a warmer place!
