OH, TO BE A BRIDE...(and a goodie)



~MINI LEMON POUND BUNDT CAKES~

(This makes 6)

2 cups cake flour
1/4 cup ground cornmeal
1 tsp. baking powder
zest from 1 lemon
1 cup sugar
2 sticks butter, room temp.
4 eggs
1/4 tsp. lemon extract
and you could add a bit of
fresh lemon if desired.

Preheat oven at 325*

Stir cake flour with the cornmeal
and baking powder, set aside.

In a bowl and with an electric mixer,
stir zest into sugar, til it is evenly mixed.
Add: the butter... cream together til fluffy.
Add: eggs one at a time, beating after each egg.
Reduce speed and add in the flour mixture,
until just combined.

Spray mini bundt molds with Pam.
Fill each mold about halfway full,
dividing batter evenly among 6 molds.
Could make a whole bundt cake too.

Bake 25 minutes
Remove and cool in pan for 5 minutes.
Then unmold onto a wire rack

You can serve them with whipped cream (or)
a little Lemon curd (or)
make a glaze of powdered sugar, a bit of milk
and vanilla.

I like fruit served along with them,
so, so good!





This is the Manti Utah Temple

(built by early Mormon Pioneers in 1888)

My husband and I serve here every Friday, I get to help new brides sometimes
as they come to be married. This is where this young lady (my youngest daughter)
was married.
My last post I had one of her pictures on it and some of my blog friends wanted
to see more pictures of her...so here they are.

Lindsey has been married two years now and is expecting her first baby at the end of July.
It is going to be a little girl...our 20th grand child...we are so excited!

These two have been best friends and sweet on each other since 8th grade.
When we moved here, Lindsey felt kind of alone in school, so at break time she'd go out and play basketball with the boys (Michael being one of them) and they got to be best friends.
That continued on through high school, college and his 2 year mission and she went to college as she waited for his return, graduating in graphic arts.

They are a great couple, always tender and kind with one another.
But then I can say that...I am the mother!

What a beautiful bride and a gorgeous couple! You should be very proud of them for doing it the right way. One of my daughters waited for a missionary too. Worth the wait, I'd say. Hi my sweet friend, I enjoyed your visit so much. It would be so wonderful for me to get to serve in the Manti Temple. I told you that that's where we were married. Do you know a Debbie Plummer? She lives in Ephriam and works at the temple.

What a beautiful bride, and what a special treat to get to help the brides in the temple.

I have been going to comment on your posts for a couple of days now...The pictures of your daughter and son-in-law are beautiful...love the one with the Utah red rocks behind her...so pretty. I think the Manti Temple is one of the pretties old temples around (looks like a fairy castle on the hill)...we often detour and drive by it on our way to visit family up north. Our kids love to get out and roll down the big hill. One of these days we will have to plan on seeing the pagaent too.

Thanks for the recipe...I have one of those little bundt cake pans around and will have to give it a try!

What a beautiful young couple they are. Many congratulations on the impending birth of their first daughter. I love the Manti Temple. I was engaged to a man about 12 years ago in Las Vegas, and that is where we were planning on being married. I think it is the most beautiful temple. Well, they are all beautiful aren't they, but some are just a bit more special than others. Great looking cakes! I need to get me a mini bundt pan!

20 grands? WHOA !! Not that is a lot of grandbabies. How blessed and wonderful. I only have half that many and feel so blessed I don't know what to do.

Reading back over your recipe...is there no fresh lemon juice added? and...will this recipe be good used in a large bundt pan instead of the minis? I am planning to make this for our home fellowship group on Sunday...

We are in Ephraim. Just across the street from 'The Malt Shop".
We lived in Manti for a while, next door to Archie and Doreen Brugger! LOVE THOSE TWO!
Archie and I act like we family :)
Everyone asks him if I am his daughter, and he always tells them yes. My sweet daddy passed away some years ago, and so I love the hugs and smiles and 'family' connection with Archie!
It's a loooooong story, how we moved and ended up back in Sanpete and in Ephraim. It also involves a really great story and many miracles!
Someday, I'll tell you the story.
